Keep in a bottle closely corked, and work one tablespoon- ful into one pound of butter and it will keep indefi- nitely. There is nothing hurtful in the compound, and the saltpetre prevents the acid from ioiramg, which gives the butter a strong taste. You can work this into market butter if you choose to take the trouble, and I think it will repay you.
