The hardest varieties of wheat, which contain the most gluten, contain, also, the most nitrogen which promotes the rising of the dough, so necessary in making good and light bread, and the quan- tity of this substance (gluten,) varies, according to the soil or the manure, from 5 per cent, in poor qualities to more than 30 per cent, in the best.
