At this stage boil the remainder of the solution with about 25 drops of dilute sulphuric acid for 10 minutes. Neutralize and test this with Fehling's solution for glucose.
Dextrin.
The dextrins are colloidal compounds, soluble in water, and precipitated by strong alcohol. As starch hydrolysis proceeds a number of dextrins are formed : the dextrin which gives a red-brown color with iodine is termed erythrodextrin ; that which is forming as iodine ceases to act is achroodextrin.
