Flour. Fig. 156 is a diagram of a thin slice taken along the length of a grain of wheat. The grain is oval in shape, and is divided by a flat plate, the scutellum, into two unequal parts. The upper part is filled with a substance known as endosperm j while the lower portion, placed somewhat to one side of the grain, consists of the embryo destined, under favourable con- ditions, to give rise to a new wheat plant. The whole grain is surrounded by six layers (not all shown separately) which together con- stitute the bran. The endosperm consists of a store of food formed for the support of the embryo during the earlier stages of its growth. The plate the scutellum which lies between the embryo and its food, acts as a nurse to the tiny plant absorbing the endosperm, changing it into easily digested substances, and passing it on, little by little, to the embryo as it is required.
