This represents 61 per cent, of the capi- tal invested in the undertaking, but it should be remarked that, notwithstanding the large increase in business, the ratio of trading ex- penses to sales for the year 1915-16 showed an increase of six per cent. The fact that a large proportion of the bread manufactured was sup- plied in large quantit...ies to the public institu- tions has undoubtedly enabled costs of delivery to be reduced to a mimimum. Furthermore, no allowance need be made for bad debts, as the whole of the trade is with government depart- ments or for cash, and this item, which is a considerable one in every private baker's bal- ance sheet, has not to be provided for.
