Some organisms found in water, none of which, fortunately, produce disease, flourish in a high temperature. All disease-producing organisms, except those in spore form, are promptly destroyed by boiling, and many of them by a lower temperature. Few ordi- nary organisms will survive a temperature of 57° C. for more than a short time, and this fact gives the pro- cess of pasteurization, as applied to milk, its value. This is the process whereby milk is heated to a point between 65° and 70° C. and... maintained at that tem- perature for ten or fifteen minutes. This kills the dis- ease-producing organisms, without changing the taste and character of the fluid as does boiling. For the same reason, satisfactory results have been obtained in the British service with a camp water-heater that raises the supply to 85° C. for only a very short time. Moisture is necessary for the growth of bacteria, and drying checks their growth even when it does not kill them, as it does many varieties. Being solid bodies heavier than air, bacteria are not given off from moist surfaces.
