The varieties of rice cultivated in Siam after the above methods number more than forty, many of which, however, resemble each other so closely as to be scarcely worth special notice. Others present highly distinctive qualities either in size, color, or flavor of the grain (such as glutinous rice, red rice, and the small, round-grained hill rice), or in the nature of the plant itself. There can be no doubt that some of the latter varieties have been evolved from the peculiar conditions under wh
...ich they have, during succeeding centuries, been cultivated. Thus a variety of common rice, grown on land which is subject to high floods, has the almost miraculous faculty of growing with more or less speed (at times as much as a foot in twelve hours) according as the water rises, the plant often reaching as much as ten feet in length in its efforts to keep its leaves above water. This variety, now a thoroughly established one in Siam, is unknown in Burmah, Java, or India.
That the amount of rice produced in Siam has in- creased enormously of late years is evidenced by a glance at the customs figures, which show that the 1 62 Kingdom of Siam amount of rice annually exported has risen from 2i7,cxx5 tons in 1885, to close on 8cx5,ooo tons last year.
