In travelling from Toulouse to the shore of the Mediterranean, along the canal of Languedoc, I first observed the Olive at a little distance from Carcas- sonne : but it appeared to have ventured hither only upon trial, and from the size of the trees I judged them to be a recent settlement. About Beziers , Montpellier , Aix , etc. , the hills in every direction are covered with Olives. Thus we see that this inestimable production has been widely diffused by the bountiful hand of nature.
